We got in contact with Indulging Ltd, a wedding caterer in the South East to see what idea they could give us for brides and grooms. As you can image, after winning Wedding Caterer of the Year 2008, they know what they are talking about. So here are some essential tips for your reception.

Set a budget
* Work out the number of guests you are expecting
* The amount you wish to spend on catering per head
* Find a caterer that suits your budget, is adaptable and is happy to create a bespoke menu for your special day.
* Make sure your caterer is able to cope with large numbers, if required

A good caterer will be willing to offer you references – it is essential to take these up!

The Food
Indulgence Tips – Canapés
You will need to offer your guests approximately 6 canapés per hour of drinks reception for them to feel well nourished.  There is nothing worse than not offering enough canapés – best to offer none at all, than insufficient.
Some brides offer their guests more canapés as an alternative to a starter.  Which is great if you are on a tight timescale?

The Main Event and Style of Service
Seated and Served

Advantages
* Easy for bride and guests
* Is ideal for a traditional wedding
* Allows for stylish presentation of food

Disadvantages
* It is more formal for those looking for a relaxed atmosphere – but see tip below!

Indulgence Tip
Some brides prefer family style service to the table.  And some even supply a roast and allocate a carver equipping a guest from each table with carving knife and fork and an apron and chef hat!

Buffet
Advantages
* Gives a relaxed and informal feel to a wedding
* You can offer guests more flexibility and choice
* It is often a cheaper option,  less staff are needed to serve

Disadvantages
* Buffet style takes longer than guests being served food
* Food does not look so well presented
* Elderly guests and children often find it difficult to cope with carrying a plate

Indulgence Top Tip
Ensure that the Caterer will manage tables approaching the buffet table, so you don’t have huge queues in the venue.

Bowl Food
Bowl food is a great option if you want a really relaxed atmosphere!  Served as if large canapés – ideal for allowing guests to mingle.  Not ideal for elderly guests but great if you have a large number of children attending.  Everyone loves a miniature feast of Fish and Chips or for the more adventurous Thai Crab and Lemongrass Lollipops!

Food Themes
If you have a theme for the day – a good caterer will be able to tailor their menus to suit your theme.
From Exotic Moroccan Tagines to Sumptuous Thai Banquets, Spanish Paella to traditional English Spit Roast.

What to expect from your caterer on the day of your wedding
Your caterer should be flexible with timings. Photos/services/ speeches can all run over time.  Ensure your menu and your caterer is flexible, within reason! i.e. a Roquefort soufflé will not wait for anyone!

Indulgence Tips
* Keep things simple!  Go for the wow factor if you have canapés.
* Keep main dishes simple but tasty.
* Try and accommodate most people’s tastes and remember to ask for your guests dietary requirements within their invitations.
* A good caterer will offer you plenty of menu design advice, allow you to express your personality in the food served and have experience in accommodating your guests’ dietary needs.

Finally, whatever style of food your offer your guests – the most important person is you!  If you are happy and relaxed on your wedding day, your guests will be too!
